Wow! This is great and the Cornbread complimented it perfectly. I've got enough to have it again and be able to provide my 89 year young Dad with a couple of good homemade meals. It's all good!! Listen for the Drone Dave, you might have warm it up though, it's cold going over the North Cascade range!

Okay, here it is! My rendition of Mike's Chicken Vegetable soup. I'm following Dave's suggestion and have the Cornbread in the oven. You should smell all the delicious aroma wafting through the house! This is going to be good...

Love all your ingredients especially the veggies, it's still plenty cold up here in the upper Midwest and could use the hot soup. Your ingredients can make a man's mouth water from just reading it. Keep it coming.

Made this Liver charmer this week-end:

Brown off 2 chopped up chicken breasts with chopped shallots and butter. Add 4 cans chicken broth, 1 can of corn, 2 cans diced tomatoes. Add a can of stewed tomatoes. Chop up 2 yellow squash and 2 Zukes and add. Add portabella musrooms (cook off on side and drain) and a regular box of cous - cous.  Rip up a fist full of fresh basil and bamm it in. (all you want). And a couple of chicken bullion cubes too. Add a table spoon of butter to round it off. Let simmer and stir for an hour. Serve with some french bread.  What a basil blast!

That sounds amazing Mike. 

Now that I work from home, experimenting with different crock pot recipes and made something similar; chicken parm soup. Like your ingredients better!

Well the soup was sounding absolutely amazing..then the ice cream came out of left field and goodness Dave!!! i would tear some ice cream up right now LOL ahh! (Think healthy Lori..think healthy)

I'll be right over Mike ... !

I'll even bring the hot cornbread.

When I get some energy back and get beyond my Riba sweet tooth I'll be makin' some good for ya food again.

Just can't manage it right now ... this recipe sounds delicious and packed with good stuff ... good job Mike!

Probably should feel bad since I'm sittin' here eatin' Ice Cream ... but I don't ... lol

Now that's my kind of Chicken Vegetable Soup! You weren't kidding about how much you made, but you'll have it for weeks to come. Don't eat it all the time or you might not want to make it again, ha! That sounds and looks like a very healthy and filling meal. A nice full grain bread with that would really top it off. I'm a dunker and love my bread and butter. Saltines, with or without salt, depending on your diet, is also another go to with soups and chili for me. 

I have to wonder why everyone starts posting food pictures and recipes right when I'm most hungry? Which one of you have hacked my webcam and can hear my stomach growling? Please excuse the rumbling (and rambling!) wink

Wow, this soup I made today turned out to be delicious and it's packed with vitamins and liver friendly. I'll probably be jumping up and down with healthy energy tomorrow...and for weeks to come considering the amount I made, most of which I'll freeze in meal size containers.

Mike's Chicken Vegetable Soup

 In a large pot:

*Add 2 lbs fresh chicken tenderloins,
 4 sliced red potatoes,
 1/2 sliced yellow onion,
 black pepper,
 parsley flakes,
 21oz chicken broth,
 enough water to cover everything,
# boil for 20 minutes.
 
*Add carrots,
 celery
#slow boil for an additional 20 minutes.
 
*Add pinto beans,
 corn,
 stewed tomatoes,
 green beans,
 mushrooms
#reduce heat to simmer for 45 minutes (less if you have teeth lol biggrin)

Enjoy!
