I haven't tried to cook with it. I did use it in my baths and on my skin till I ran out of it. Guess it's time for more!

I`m a recent convert to using coconut oil to cook with and spread on toast, and now I`m going to try it on my skin too after reading your comments.  I`ve checked my brand and happy to see it`s unrefined.  Very interesting and informative thread, thanks for raising the question, Sandy, and for your input everyone!

Matt, that sounds yummy!

I looked up coconut oil and its important to use unrefined coconut oils. The Mercola brand says it is unrefined. I just looked at mine made by Spectrum and I'm shocked that it is refined hmm  I'll have to check out the stores in my area.

     wow just read your bio,what a courageous strong female you are! congrats to your joyous attitude in life and nearing the finish line!!!

     also i believe you teach as well for we always look on the lighter side and guide,as well as nurses and psychology oriented professionals.

     i'm only on day 51,so i guess week 7 or 8. your cholestoral is superb after all that fat! at start my toal was 148,hdl 69, tris 79 and ldl 63.

     now my total is 165,hdl55,tris 155 and ldl 79. i believe it's either low hemo doing this or the coco oil. i guess another sx.

     just tried the oil as a lotion,love,love, it!!!!

Coconut oil is one of the best butter substitutes that I ever found, it spreads on toast like butter and taste sweeter if you buy the correct type/brand.

Try this , toast 2 slices of Ezekiel breads Cinnamon raisin bread (all sprouted grain bread) then spread the cogconut oil from Costco or Dr Mercola brand. You will never use butter again. I have also used it with lobster with similar success. 

i have tried several brands and the Cosco and Mercola have the best taste and best price,you can buy a large amount ( 1 gal.@cosco or 2 gal. @ Mercola ) which you will go through faster than you think. You can use the stuff for a lot of applications.

After reading this thread I called my primary care. I had not had a cholesterol panel done since 2010. I think the coconut oil is a good thing!
Total cholestrol is 171
HDL is 54
Triglycerides 78
LDL is 101

I didn't really know. 12 weeks of high fat during tx and all. My liver loving diet is a good thing. Relieved.
ucbgal - how long have you been off of treatment?

I use it a lot for cooking and on my skin too. But I also noticed it is HIGH in fat. Nurschic said it well. A medium chain triglyceride is broken down much better by your body. Does anyone know for sure about the fat content? Does it balance out?

I have been mixing it with olive oil for cooking. Just had some blood work done. The first since treatment. I can't wait to see how the cholesterol is.

Actually, it is not expensive to use as a lotion cause a little goes a long way and it is so much better for the skin then lotions. No rebound dryness. I buy mine at Costco and a huge jug is only about $18.....lots of the no alcohol lotions are around $10 and you dont even get a quarter of the amount you do with the coconut oil.

I love cooking with coconut oil!

It's a solid when its cool out and a liquid when the air temperature is hot in your kitchen cupboard.

Didnt think to use it on my skin, organic is too expensive for that purpose.

I uses coconut oil as a lotion on treatment.
I still use it at times. After reading your messages
I can't wait to cook w it.
Sandy, I have gained 15 lbs.
No more desserts for me!!!!

     thanks for the advice. am definitely going to try the coconut oil as a skin lotion! i'll bet it works better than vitamin-e ointment w/wheat germ oil and aloe.

     loved it in the smoothies and tried a mash of sweet potato and kale w/cinammon. delic...

     till i get my triglycerides down only olive oil for me.

i use coconut oil to cook too some people tho doesn't like the taste of it. I dont mind having eggs/meat fried on it...while on therapy i've used it to cook (and olive oil on salads and with riba). I doubt it has "evil" saturated fat...

Coconut oil is a saturated fat but its chain molecule make up is different then other saturated fats. They dont raise cholesterol levels like animal fats do. Coconut oil melts at a very low temp, lower then body temp. It makes a GREAT body lotion as well ;). I use coconut oil to cook with and have even put it into smoothies.

     just happenned to notice that coconut oil has 12 grams of saturated fat/serving. tried to google info on it and found out fda recommends no saturated fats in diet. since my triglycerides went from 74 to 155 while on treatment, i'm a bit concerned. any thoughts or comments?
